Kofta & Talattouri

Tzatziki is a sauce that originates in Greece, there is a Cyprus variant called Talattouri.




This is my version of Talattouri with Shish Kotfa.

The Kofta was grilled over live fire on the Shirley SM Fire Pit and served on a bed of Butter lettuce with a side of Yucca Fries.

Picanha roast from grass-fed Dexter.
First score fat cap, rub with salt, let rest.
Cook on Argentine open fire grill at low heat about 30 minutes, fat cap down.
Let rest 15 minutes.
Then slice into 1" thick individual steaks.
Sprinkle with salt and grill steaks at medium-high heat to medium rare.
Finally, cut steaks into slices and serve.
