![]() Picanha roast from grass-fed Dexter.
First score fat cap, rub with salt, let rest. Cook on Argentine open fire grill at low heat about 30 minutes, fat cap down. Let rest 15 minutes. Then slice into 1" thick individual steaks. Sprinkle with salt and grill steaks at medium-high heat to medium rare. Finally, cut steaks into slices and serve. Click here for video of cook. Here is my TD entry photo. ![]()
